Whole Wheat Multigrain Bread Without Yeast Without Maida

Ingredients:👉

2 cups whole wheat flour
1 cup oat flour (made from ground oats)
1/2 cup finger millet (ragi) flour
1/2 cup sorghum (jowar) flour
1/3 cup flaxseeds (ground into a fine powder)
1 1/2 tsp salt
1 tbsp corn starch
1 tsp baking soda
1/4 cup jaggery powder (or any sweetener of your choice)
1/2 cup water (for flaxseed mixture)
2 tbsp olive oil (or any oil of your choice)
1 cup yogurt
1 cup water (for the dough)
Milk (for brushing the top)
Mix of oats and seeds (pumpkin, flaxseed, sunflower, hempseed) for topping

Instructions:👉
Preheat the oven to 190°C (375°F)

Prepare Flaxseed Mixture: 👉

Grind 1/3 cup flaxseeds into a fine powder.
In a bowl, mix flaxseed powder with 1/2 cup water. Let it rest for 10-12 minutes until it thickens.

Mix Dry Ingredients:👉

In a large bowl, combine 2 cups whole wheat flour, 1 cup oat flour, 1/2 cup finger millet flour, 1/2 cup sorghum flour, 1 1/2 tsp salt, 1 tbsp corn starch, 1 tsp baking soda, and 1/4 cup jaggery powder. Mix well.

Combine Wet and Dry Ingredients:👉

Add the thickened flaxseed mixture to the dry ingredients.
Add 2 tbsp oil and 1 cup yogurt. Mix using your hands.
Gradually add 1 cup water and mix to form a soft and smooth dough. Add more water if necessary.

Prepare for Baking:👉

Transfer the dough to a loaf pan.
Brush the top with milk and sprinkle generously with the mix of oats and seeds.

Bake:👉

Bake at 190°C (375°F) in a preheated oven for about 60 minutes until the bread is golden and cooked through.
Let the bread cool completely before slicing.

Hey I have tried your lockdown chocolate cookies recipe and it came out GREAT… I would like to try this recipe with All-purpose flour instead of whole wheat flour as thats what I have at the moment😅😅 So will it still comeout well if I just replace it or do I have to change other ingredients as well to make it work?? Would really appreciate your advice 🙂
