I got a bunch of cans of mixed vegetables. What would be the best strategy to use them in stir fry?
I’m sure it’s a lot healthier than the food the facility cooks.
Frozen vegetables are particularly useful, when the veggies are out of season locally. The fresh ones that you can buy have either travelled a long distance or have been in storage. The frozen ones are usually frozen on the same day as they were harvested, so they can actually be fresher than fresh vegetables.

I have been playing with the Costco frozen veggies, we have enjoyed them but will be open to ideas
I too found that using a scissors to cut the frozen vegetables into smaller pieces after they've thawed a bit helps it cook evenly, and you don't bite into a big piece of one particular vegetable – it helps the flavors mix together well.
